Ingredients

1 pound ground beef

1 cup uncooked long-grain rice

2 cups beef broth

1 medium onion, diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, undrained

1 cup frozen peas and carrots

1 teaspoon Worcestershire sauce

1 teaspoon dried Italian seasoning

½ teaspoon paprika

Salt and pepper to taste

1 cup shredded cheddar cheese (optional)

Fresh parsley for garnish (optional)

Instructions

Preheat and Prepare: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish or spray with cooking spray for easy cleanup.

Cook the Beef: In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a wooden spoon as it cooks, about 5-7 minutes. Drain excess fat if necessary.

Sauté Aromatics: Add the diced onion and minced garlic to the skillet. Cook for an additional 2-3 minutes until the onion is translucent.

Combine Ingredients: Stir in the rice, beef broth, diced tomatoes (with juice), Worcestershire sauce, Italian seasoning, paprika, peas, and carrots. Season with salt and pepper to taste.

Transfer to Baking Dish: Pour the mixture into the prepared baking dish, spreading it out evenly.

Cover and Bake: Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 20 minutes.

Add Cheese (Optional): After 20 minutes, remove the foil, sprinkle the top with shredded cheddar cheese, if using, and return to the oven for an additional 5 minutes or until the cheese is melted and bubbly.

Garnish and Serve: Remove the casserole from the oven and let it sit for 5 minutes. Garnish with fresh parsley, if desired. Serve warm and enjoy!
