2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 cans (14.5 oz each) diced tomatoes, with juices

2 cups vegetable broth or chicken broth

1 teaspoon dried thyme

1 teaspoon sugar (optional)

1 teaspoon salt

½ teaspoon freshly cracked black pepper

1 cup heavy cream (or coconut cream for a vegan option)

1 cup fresh basil leaves, packed, plus extra for garnish

¼ cup grated Parmesan cheese (optional, for garnish)

Instructions
 

Sauté Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add Tomatoes and Broth: Pour in the diced tomatoes (with their juices) and the vegetable or chicken broth. Mix in the dried thyme, sugar (if using), salt, and black pepper. Bring the mixture to a gentle simmer, allowing it to cook for about 10 minutes to let the flavors meld together.

      Blend the Soup: After simmering, remove the pot from heat. Using an immersion blender, carefully blend the soup until it reaches your desired consistency. If you don’t have an immersion blender, you can transfer the soup in batches to a traditional blender – just be careful as it will be hot!

        Stir in Cream and Basil: Return the blended soup to low heat. Stir in the heavy cream and fresh basil leaves. Allow the soup to warm gently over low heat for another 5 minutes. Taste and adjust seasoning as needed.
