30-Minute Garlic Butter Shrimp and Orzo

1 pound (450g) large shrimp, peeled and deveined

1 cup orzo pasta

4 tablespoons unsalted butter

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach, fresh

1/2 cup vegetable or chicken broth

1 teaspoon smoked paprika

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Zest of 1 lemon

Juice of 1 lemon

Cook the Orzo: In a medium saucepan, bring 4 cups of salted water to a boil. Add the orzo and cook according to the package instructions until al dente (about 8-10 minutes). Drain and set aside.

    Sauté the Shrimp: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the shrimp in a single layer, seasoning with salt, pepper, and smoked paprika. Cook for about 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.

      Make the Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and red pepper flakes. Sauté for about 30 seconds until fragrant.

        Add Tomatoes and Spinach: Add the cherry tomatoes and cook until they start to soften, about 2 minutes. Next, stir in the fresh spinach and let it wilt.

          Combine Ingredients: Pour in the vegetable or chicken broth, lemon juice, and lemon zest. Stir to combine, then return the cooked shrimp to the skillet along with the drained orzo. Mix everything together until well coated. Taste and adjust seasoning if necessary.
