4 boneless, skinless chicken breasts

3 tablespoons olive oil, divided

4 cloves garlic, minced

1 teaspoon lemon zest

1/4 cup fresh lemon juice (about 2 lemons)

1 teaspoon dried oregano

1 teaspoon paprika

1/2 teaspoon red pepper flakes (optional for heat)

Salt and pepper, to taste

2 cups fresh spinach

1 cup cherry tomatoes, halved

Fresh parsley, chopped, for garnish

Instructions
 

Prepare the Chicken: Pat the chicken breasts dry with paper towels and season both sides generously with salt, pepper, paprika, and oregano.

    Sauté the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts to the skillet. Cook for about 5-6 minutes per side, or until the chicken is golden brown and cooked through (internal temperature of 165°F). Remove from the skillet and set aside.

      Make the Garlic Sauce: In the same skillet, reduce heat to medium and add the remaining tablespoon of olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it.

        Add Lemon and Spinach: Stir in the lemon zest, lemon juice, and red pepper flakes (if using). Let the sauce simmer for 1-2 minutes, then add the spinach and cherry tomatoes. Cook until the spinach is wilted, about 2-3 minutes.

          Combine Chicken and Sauce: Return the cooked chicken to the skillet, nestling it into the lemon garlic sauce. Spoon some sauce over the chicken and heat for an additional minute to meld the flavors.
