Ingredients

8 oz (about 2 cups) penne pasta

1 lb ground turkey

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 packet taco seasoning (about 1 oz)

1 can (15 oz) diced tomatoes with green chilies (undrained)

1 cup corn (frozen or canned)

1 cup beef or chicken broth

1 cup shredded cheddar cheese

Salt and pepper to taste

Chopped cilantro or green onions for garnish (optional)

Instructions

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Once boiling, add the penne pasta and cook according to package instructions until al dente, typically around 8-10 minutes. Drain and set aside.

Sauté the Turkey: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the diced onion and sauté for about 2-3 minutes until translucent.

Add Garlic and Turkey: Stir in the minced garlic and cook for an additional 30 seconds until fragrant. Then, add the ground turkey to the skillet. Break it apart with a spatula and cook for 5-7 minutes, or until browned and cooked through. Season with salt and pepper while cooking.

Mix in Flavor: Sprinkle the taco seasoning over the cooked turkey, followed by the undrained diced tomatoes and corn. Pour in the chicken or beef broth, stirring everything to combine. Bring to a simmer, then reduce the heat and let it simmer for about 5 minutes.

Combine it All: Add the drained pasta into the skillet with the turkey mixture. Stir everything together until the pasta is well coated with the sauce and heated through.

Cheesy Finish: Remove the skillet from heat and sprinkle the shredded cheddar cheese over the top. Cover the skillet for a couple of minutes to allow the cheese to melt.

Serve and Garnish: Serve the taco pasta hot, garnished with chopped cilantro or green onions if desired. Enjoy your quick and flavorful meal!
