1 lb ground turkey

1 medium sweet potato, peeled and diced into small cubes

1 small onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 cup spinach (fresh or frozen)

2 tsp smoked paprika

1 tsp ground cumin

1/2 tsp chili powder (optional for heat)

Salt and pepper to taste

2 tbsp olive oil

1/4 cup chicken broth

Fresh parsley, chopped (for garnish)

1 avocado, sliced (for serving)

Instructions
 

Prep the Ingredients: Begin by peeling and dicing the sweet potato into small cubes. Dice the onion and red bell pepper, and mince the garlic. If using frozen spinach, allow it to thaw.

    Sauté the Turkey: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the ground turkey, season with salt, pepper, and half of the smoked paprika. Cook for about 5-7 minutes, stirring until the turkey is browned and cooked through. Remove from the skillet and set aside.

      Cook the Sweet Potato: In the same skillet, add the remaining tablespoon of olive oil. Add the diced sweet potato and cook for about 8-10 minutes, stirring occasionally, until they start to soften.

        Add Aromatics: Once the sweet potatoes are tender, add diced onion, garlic, and red bell pepper. Sauté for about 3-4 minutes or until the vegetables are softened and the onion is translucent.

          Combine and Flavor: Return the cooked turkey to the skillet. Add the spinach, chicken broth, ground cumin, the rest of the smoked paprika, chili powder (if using), and a pinch of salt and pepper.
