Ingredients

1 lb ground chicken

1 tablespoon sesame oil

2 cloves garlic, minced

1-inch piece ginger, minced

1 bell pepper, finely chopped (any color)

1 cup water chestnuts, diced

2 green onions, sliced

1/4 cup soy sauce (or tamari for gluten-free)

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sriracha (adjust to taste)

Salt and pepper to taste

1 head of butter lettuce (or iceberg lettuce), leaves separated

Optional toppings: chopped cilantro, crushed peanuts, lime wedges

Instructions

Preparation: Start by preparing all your ingredients. Finely chop the bell pepper, water chestnuts, and green onions. Set aside.

Cook the Chicken: In a large mixing bowl, combine ground chicken, sesame oil, minced garlic, minced ginger, and season with salt and pepper. Mix until well-combined.

Air Fry the Chicken: Preheat your air fryer to 380°F (193°C). Place the chicken mixture into the air fryer basket in a single layer, ensuring not to overcrowd. Cook for 10-12 minutes, shaking the basket halfway through to ensure even cooking until the chicken is browned and cooked through.

Mix Sauce Ingredients: In a separate bowl, prepare the sauce by mixing soy sauce, hoisin sauce, rice vinegar, and sriracha. Stir well to combine.

Combine Ingredients: Once the chicken is cooked, carefully transfer it to a large pan over medium heat. Add the chopped bell pepper, water chestnuts, and the sauce mixture. Stir well and cook for an additional 3-5 minutes until the vegetables are tender and the chicken is well-coated with the sauce.

Assemble the Wraps: Take a lettuce leaf, spoon the chicken mixture into the center, and top with sliced green onions, chopped cilantro, and crushed peanuts if desired. Squeeze a little lime juice over the top for added flavor.

Serve: Enjoy immediately while warm, either as an appetizer or a light meal.
