In a mixing bowl, combine soy sauce, maple syrup, grated ginger, minced garlic, rice vinegar, sesame oil, and black pepper. Whisk until well combined.
Cut the chicken into bite-sized pieces and add them to the marinade, making sure each piece is well coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor.
After marinating, remove the chicken from the fridge and sprinkle cornstarch over the top. Toss gently until the chicken pieces are evenly coated.
Preheat your air fryer to 375°F (190°C) for about 5 minutes.
Arrange the marinated and coated chicken pieces in a single layer in the air fryer basket. Cook for 10-12 minutes, shaking the basket halfway through, until the chicken is cooked through and golden brown.
Once cooked, remove the chicken from the air fryer and transfer it to a serving dish. Sprinkle with sesame seeds and chopped green onions for a fresh touch.
