2 medium zucchinis, sliced into sticks (about 1/4-inch thick)

1 cup mozzarella cheese sticks, cut into matchsticks

1/2 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

Cooking spray or olive oil spray for air frying

Marinara sauce, for dipping

Instructions
 

Begin by preheating your air fryer to 400°F (200°C) for about 5 minutes while you prepare the zucchini sticks.

    Set up a breading station with three shallow bowls:

      - In the first bowl, place the all-purpose flour seasoned with a pinch of salt and pepper.

        - In the second bowl, place the beaten eggs.

          - In the third bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, Italian seasoning, and a little more salt and pepper.

            Take a zucchini stick and dip it first into the flour, coating it evenly. Shake off any excess flour.

              Next, dip the floured zucchini into the beaten eggs, ensuring it is fully coated.

                Finally, roll the zucchini stick in the breadcrumb mixture, pressing lightly to help the crumbs adhere. Repeat this process until all zucchini sticks are fully breaded.

                  Lightly spray the air fryer basket with cooking spray to prevent sticking. Arrange the breaded zucchini sticks in the basket in a single layer, making sure they’re not overcrowded. You may need to work in batches.

                    Spray the top of the zucchini sticks lightly with cooking spray or olive oil spray to help them become golden and crispy.
