2 medium zucchinis

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

Prep the Zucchini: Start by washing the zucchinis and slicing them into thin rounds, about 1/8 inch thick. This helps achieve that perfect crispy texture.

    Create the Breading Station: In one bowl, beat the eggs. In a separate bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well.

      Bread the Zucchini: Dip each zucchini slice into the beaten eggs, allowing any excess to drip off. Then, coat each slice with the breadcrumb mixture, pressing gently to ensure the breadcrumbs stick well.

        Prepare the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 3-5 minutes. Lightly spray the air fryer basket with olive oil to prevent sticking.

          Cook the Zucchini Chips: Place the breaded zucchini slices in a single layer in the air fryer basket. Make sure they are not overlapping for even cooking. Lightly spray the tops with olive oil spray.

            Air Fry: Cook the zucchini chips in the air fryer at 400°F (200°C) for about 10-12 minutes, flipping them halfway through. Keep an eye on them to prevent any burning, as cook times may vary depending on your air fryer model.
