1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 cup rolled oats

1/2 cup dark chocolate chips (dairy-free, if desired)

1/4 teaspoon sea salt

1/4 cup chopped nuts (optional: walnuts, pecans, or almonds)

1/4 teaspoon cinnamon (optional)

Instructions
 

Combine Base Ingredients: In a medium-sized mixing bowl, combine the almond butter, honey (or maple syrup), and vanilla extract. Stir until smooth and well combined.

    Add Dry Ingredients: To the same bowl, add the rolled oats, dark chocolate chips, sea salt, and any optional ingredients like chopped nuts or cinnamon. Mix thoroughly until all ingredients are well incorporated.

      Chill Mixture: Cover the bowl with plastic wrap or a lid, and place it in the refrigerator for about 30 minutes to firm up the mixture slightly. This will make it easier to handle.

        Form Bites: Once the mixture has chilled, remove it from the refrigerator. Using your hands, scoop out about 1 tablespoon of the mixture and roll it into a ball shape. Repeat this process until all the mixture is used up.

          Chill Again: Place the formed bites onto a baking sheet lined with parchment paper. Once all bites are shaped, return them to the fridge for an additional 15-20 minutes to set.
