2 cups granulated sugar

4 large eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

½ teaspoon ground nutmeg

1 cup fresh apple cider

1 cup finely chopped apples (Granny Smith or Honeycrisp work best)

½ cup chopped walnuts or pecans (optional)

1 cup powdered sugar (for glaze)

2 tablespoons apple cider (for glaze)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 10-inch bundt pan or a loaf pan.

    Cream Butter and Sugar: In a large mixing bowl, use a hand mixer or stand mixer to cream together the softened butter and granulated sugar until light and fluffy (about 4-5 minutes).

      Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Then, mix in the vanilla extract until combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

          Mix Dry and Wet Ingredients: Gradually add the dry mixture to the butter mixture, alternating with the apple cider. Start and end with the dry ingredients. Mix on low speed until just combined. Avoid overmixing.

            Fold in Apples and Nuts: Gently fold in the finely chopped apples and nuts (if using) with a spatula until evenly distributed throughout the batter.

              Pour into Pan: Pour the batter into your prepared bundt or loaf pan, smoothing the top with a spatula.
