Apple Cinnamon Mini Muffin Bites

1 cup all-purpose flour

1/2 cup whole wheat flour

1/2 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/2 cup unsweetened applesauce

1/4 cup milk (dairy or non-dairy)

1/4 cup vegetable oil

1 large egg

1 cup peeled and diced apples (preferably Granny Smith or Honeycrisp)

1/4 cup chopped walnuts (optional)

1 tablespoon brown sugar for topping

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with mini muffin liners.

    Mix Dry Ingredients: In a large mixing bowl, whisk together both flours, granulated sugar, baking powder, salt, cinnamon, and nutmeg until well combined.

      Combine Wet Ingredients: In another bowl, mix the applesauce, milk, vegetable oil, and egg until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.

          Fold in Apples & Nuts: Gently fold in the diced apples and chopped walnuts (if using) until evenly distributed in the batter.

            Fill Muffin Tin: Scoop the batter into the prepared mini muffin tin, filling each cup about 2/3 full.

              Add Topping: Sprinkle a little brown sugar on top of each muffin for a sweet, caramelized finish.

                Bake: Place the muffin tin in the oven and bake for 12-15 minutes, or until a toothpick inserted in the center comes out clean.

                  Cool: Remove the muffins from the oven and let them cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
