Apple Cinnamon Oat Muffins

1 cup rolled oats

1 cup whole wheat flour

1/2 cup brown sugar (packed)

1/2 cup milk (dairy or non-dairy)

1/4 cup unsweetened applesauce

1/4 cup vegetable oil (or melted coconut oil)

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon salt

1 1/2 cups peeled and diced apples (preferably tart, like Granny Smith)

Optional: 1/2 cup chopped walnuts or pecans

Optional: Topping - 2 tablespoons rolled oats, 1 tablespoon brown sugar, and a dash of cinnamon mixed together

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, whole wheat flour, brown sugar, baking powder, baking soda, cinnamon, and salt. Mix well to ensure even distribution of the ingredients.

      Combine Wet Ingredients: In another bowl, whisk together the milk, applesauce, vegetable oil, eggs, and vanilla extract until smooth and well combined.

        Combine Mixtures: Pour the wet ingredients into the bowl of dry ingredients and stir gently until just combined. Do not overmix; a few lumps are okay.

          Add Apples and Nuts: Gently fold in the diced apples and, if desired, the chopped walnuts or pecans into the batter, ensuring they are evenly distributed.

            Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. If using the topping, sprinkle it evenly over the tops of the muffins.

              Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
