1 cup all-purpose flour

1 tablespoon baking powder

1 tablespoon granulated sugar

1 teaspoon ground cinnamon

½ teaspoon salt

1 large egg

1 cup milk (or nondairy milk)

2 tablespoons unsalted butter, melted (plus extra for the skillet)

1 medium apple, peeled and diced (preferably Granny Smith for tartness)

½ teaspoon vanilla extract

Maple syrup, for serving

Optional: powdered sugar for dusting

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, sugar, cinnamon, and salt until well combined.

    Combine Wet Ingredients: In another bowl, beat the egg and then stir in the milk, melted butter, and vanilla extract.

      Combine Mixtures: Pour the wet ingredients into the dry ingredients. Gently fold them together until just combined. Do not overmix; a few lumps are okay. Gently fold in the diced apples.

        Preheat Skillet: Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter.

          Cook Pancakes: Pour about ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for an additional 1-2 minutes, or until golden brown. Repeat until all batter is used, keeping cooked pancakes warm in a low oven.

            Assemble Sandwiches: Once all pancakes are ready, take two pancakes and layer a drizzle of maple syrup in between them, creating a pancake sandwich. Repeat with remaining pancakes.
