For the loaf:

2 cups all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1 tsp ground cinnamon

1/2 tsp salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 cup buttermilk

1 cup peeled, cored, and diced apples (about 1 medium apple; Granny Smith or Honeycrisp works well)

For the cinnamon swirl filling:

1/4 cup brown sugar

1 tsp ground cinnamon

1/4 cup chopped walnuts or pecans (optional)

For the glaze (optional):

1 cup powdered sugar

2-3 tbsp milk

1/2 tsp vanilla extract

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set aside.

    Make the cinnamon filling: In a small bowl, combine the brown sugar, ground cinnamon, and chopped nuts (if using). Mix well and set aside.

      Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt until well combined. Set aside.

        Cream the butter and sugar: In a large bowl, beat the softened butter and granulated sugar together using a hand mixer or stand mixer on medium speed until light and fluffy, about 3-4 minutes.

          Add eggs and vanilla: Add the eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract.

            Combine dry and wet ingredients: Gradually add the dry ingredient mixture into the butter mixture, alternating with the buttermilk. Start and end with the flour mixture, mixing until just combined.

              Fold in apples: Gently fold in the diced apples until evenly distributed.

                Layer in the loaf pan: Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon filling mixture over this layer. Pour the remaining batter on top and finish with the rest of the cinnamon filling, swirling lightly with a knife or toothpick to create a marble effect.

                  Bake the loaf: Place the loaf in the preheated oven and bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, you can tent it with aluminum foil.

                    Cool and glaze (optional): Allow the loaf to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. If desired, in a small bowl, whisk together the powdered sugar, milk, and vanilla extract to make the glaze. Drizzle over the cooled loaf before slicing.
