For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons granulated sugar

1 teaspoon cinnamon

For the Cheesecake Filling:

24 oz (3 packages) cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

1 cup apple cider (or juice)

For the Apple Filling:

3 medium apples, peeled and diced (Granny Smith or Honeycrisp recommended)

½ cup brown sugar

1 teaspoon cinnamon

1 tablespoon lemon juice

1 tablespoon cornstarch

For the Crisp Topping:

½ cup old-fashioned oats

½ cup brown sugar

½ cup all-purpose flour

1 teaspoon cinnamon

½ cup unsalted butter, softened

Instructions
 

Prepare the Crust:

    Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, granulated sugar, and cinnamon. Mix until well combined. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.

      Make the Apple Filling:

        In a medium bowl, toss the diced apples with brown sugar, cinnamon, lemon juice, and cornstarch. Set aside to let the mixture macerate and absorb flavors.

          Prepare the Cheesecake Filling:

            In a large mixing bowl, beat the cream cheese and granulated sugar with an electric mixer until smooth and creamy. Add the vanilla extract and mix until fully incorporated. Add the eggs one at a time, mixing well after each addition. Pour in the sour cream and apple cider, blending until fully combined and smooth.

              Assemble the Cheesecake:

                Pour half of the cheesecake filling into the baked crust. Gently layer half of the apple mixture on top. Follow with the remaining cheesecake filling, then the rest of the apple mixture, creating an even spread.
