1 cup rolled oats

1 cup whole wheat flour

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup coconut oil, melted

1/2 cup maple syrup or honey

1 teaspoon vanilla extract

1 cup finely grated apple (about 1 medium apple)

1/2 cup unsweetened apple sauce

1/2 cup raisins or chopped walnuts (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the rolled oats, whole wheat flour, baking soda, cinnamon, and salt until well combined.

      Mix Wet Ingredients: In another bowl, blend the melted coconut oil, maple syrup (or honey), and vanilla extract until smooth.

        Combine All Ingredients: Stir the grated apple and apple sauce into the wet ingredient mixture. Then, gradually add the wet mixture into the dry ingredients, stirring until just combined. If desired, fold in raisins or walnuts.

          Shape the Cookies: Using a tablespoon or a cookie scoop, drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart. Gently flatten each cookie slightly with the back of the spoon.

            Bake the Cookies: Bake in the preheated oven for about 12-15 minutes or until the edges are lightly golden.
