Ingredients

2 cups rolled oats

1 ½ cups milk (dairy or non-dairy)

1 medium apple, peeled and diced

1/3 cup brown sugar or maple syrup

1 tsp ground cinnamon

1/2 tsp nutmeg

1 tsp vanilla extract

1/4 cup chopped nuts (e.g., walnuts or pecans, optional)

1/4 cup raisins or dried cranberries (optional)

1/2 tsp salt

2 tablespoons melted coconut oil or butter

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a muffin tin or line it with paper liners.

Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, brown sugar or maple syrup, ground cinnamon, nutmeg, and salt. Mix well to combine.

Add Wet Ingredients: In a separate bowl, whisk together the milk, vanilla extract, and melted coconut oil or butter. Slowly pour this mixture into the dry ingredients and stir until evenly coated.

Incorporate Apples and Nuts: Gently fold in the diced apple, chopped nuts, and raisins or cranberries if using. Make sure everything is well mixed.

Fill the Muffin Tin: Spoon the mixture into the prepared muffin tin, filling each cup almost to the top. You should have enough mixture for about 12 cups.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the edges are golden brown and the oatmeal cups are set in the middle.

Cool and Serve: Allow the oatmeal cups to cool in the tin for about 5 minutes before transferring them to a wire rack. Serve warm or allow to cool completely and store for later.

Enjoy: These Apple Pie Oatmeal Cups can be enjoyed as a quick breakfast, snack, or dessert. Store leftovers in an airtight container in the refrigerator for up to 5 days.
