2 ½ cups all-purpose flour

1 teaspoon salt

1 tablespoon granulated sugar

1 cup unsalted butter, chilled and diced

6 to 8 tablespoons ice water

6 to 8 medium apples (a mix of Granny Smith and Honeycrisp)

¾ cup granulated sugar

2 tablespoons all-purpose flour

1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon butter, to dot

For Assembly:

1 egg, beaten (for egg wash)

1 tablespoon sugar (for sprinkling on top)

Prepare the Flaky Crust:

    - In a large mixing bowl, combine the flour, salt, and sugar. Whisk until blended.

      - Add the diced chilled butter into the flour mixture. Using a pastry cutter or your fingertips, work the butter into the flour until it resembles coarse crumbs with pea-sized pieces.

        - Gradually add the ice water, one tablespoon at a time, mixing until the dough starts to clump together. You might need more or less water, so add it until the dough holds together without being sticky.

          - Divide the dough into two equal parts, form them into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

            Prepare the Apple Filling:

              - Preheat your oven to 425°F (220°C).

                - Peel, core, and slice the apples into thin pieces. In a large bowl, combine the sliced apples with sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla extract. Toss until the apples are well coated.

                  Roll Out the Crust:

                    - After chilling, remove one disk of dough from the refrigerator. On a lightly floured surface, roll out the dough into a circle about 12 inches in diameter. Transfer the dough to a 9-inch pie pan, allowing the excess dough to hang over the edges.
