Apple Sage Roasted Pork Tenderloin

1.5 lbs pork tenderloin

2 medium apples (preferably Granny Smith), cored and sliced

1 cup chicken broth

¼ cup apple cider vinegar

3 tablespoons honey

2 tablespoons olive oil

1 tablespoon fresh sage, finely chopped (or 1 teaspoon dried sage)

3 cloves garlic, minced

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon ground cinnamon

¼ teaspoon red pepper flakes (optional, for a bit of heat)

Fresh sage leaves for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Marinade: In a small bowl, combine the olive oil, honey, apple cider vinegar, minced garlic, fresh sage, salt, pepper, ground cinnamon, and red pepper flakes. Mix well to create a marinade.

      Marinate the Pork: Place the pork tenderloin in a large resealable bag or shallow dish. Pour the marinade over the pork, ensuring it's well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (up to overnight for deeper flavor).

        Sear the Tenderloin: In a large ovenproof skillet or cast-iron pan, heat a tablespoon of olive oil over medium-high heat. Remove the pork from the marinade (reserve marinade for later) and sear the tenderloin for about 2-3 minutes on each side, until golden brown.

          Add Apples and Broth: Add the sliced apples to the skillet around the pork. Pour the reserved marinade and chicken broth over the pork and apples.

            Roast: Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the internal temperature of the pork reaches 145°F (63°C). Baste the pork with the pan juices halfway through cooking for extra flavor.

              Rest the Meat: Once cooked, remove the skillet from the oven and let the pork rest for about 10 minutes covered loosely with foil. This allows the juices to redistribute.

                Slice and Serve: Slice the pork tenderloin into medallions and arrange on a serving platter with the roasted apples and pan juices. Garnish with fresh sage leaves.
