3 medium apples (like Honeycrisp or Fuji), cored and cut into wedges

2 medium carrots, peeled and sliced into rounds

2 medium parsnips, peeled and sliced into rounds

1 medium sweet potato, peeled and cubed

1 medium red onion, cut into wedges

4 tablespoons olive oil

2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)

1 teaspoon cinnamon

Salt and pepper to taste

1 tablespoon balsamic vinegar

1 tablespoon maple syrup (optional, for added sweetness)

Chopped parsley for garnish (optional)

Preheat the Oven: Start by preheating your oven to 425°F (220°C) to ensure it's hot enough for roasting.

    Prepare the Veggies: In a large mixing bowl, combine the apple wedges, carrot rounds, parsnip rounds, sweet potato cubes, and red onion wedges.

      Season the Medley: Drizzle the olive oil over the veggie and apple mixture. Add the fresh thyme, cinnamon, salt, and pepper. Toss everything together until the apples and vegetables are well coated.

        Roast the Mixture: Spread the mixture evenly on a large baking sheet lined with parchment paper. Make sure the pieces are in a single layer for even roasting.
