2 cups cooked chicken, shredded or diced

1 ripe avocado, mashed

1/4 cup plain Greek yogurt (or mayonnaise)

1 tablespoon Dijon mustard

1 tablespoon lime juice

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

2 tablespoons fresh cilantro, chopped (optional)

Leafy greens for serving (such as lettuce or spinach)

Prepare the Chicken: If not already done, cook and shred the chicken. You can use rotisserie chicken for convenience or grill your own chicken breasts.

    Make the Dressing: In a mixing bowl, combine the mashed avocado, Greek yogurt (or mayonnaise), Dijon mustard, lime juice, garlic powder, onion powder, salt, and pepper. Mix well until smooth and creamy.

      Combine Ingredients: In a large mixing bowl, add the shredded chicken, halved cherry tomatoes, chopped red onion, and cilantro (if using). Pour the avocado dressing over the mixture.
