Avocado Cilantro Lime Chicken

4 boneless, skinless chicken breasts

2 ripe avocados, pitted and peeled

1/2 cup fresh cilantro leaves, packed

3 tablespoons lime juice (freshly squeezed)

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon cumin

1/2 teaspoon paprika

Salt and pepper to taste

Lime wedges, for serving

Additional cilantro for garnish

In a blender or food processor, combine the avocados, cilantro, lime juice, garlic, olive oil, cumin, paprika, salt, and pepper. Blend until smooth and creamy to create the marinade.

    Place the chicken breasts in a large zip-top bag or a shallow dish. Pour half of the avocado-cilantro marinade over the chicken, ensuring that each piece is well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for enhanced flavor.

      Preheat your grill or a stovetop grill pan over medium-high heat. Remove the chicken from the marinade and discard the used marinade.

        Grill the chicken breasts for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.

          While the chicken is grilling, lightly warm the remaining avocado-cilantro marinade in a small saucepan over low heat. Stir frequently until warmed through.

            Once the chicken is cooked, remove it from the grill and let it rest for 5 minutes. This resting period helps retain moisture.

              Slice the chicken and serve it drizzled with the warmed avocado-cilantro sauce. Garnish with extra cilantro and lime wedges on the side.
