2 slices of whole grain or sourdough bread

1 ripe avocado

1 medium tomato (heirloom or vine-ripened preferred)

2 large eggs

1 tablespoon olive oil

Juice of half a lemon

Salt, to taste

Freshly ground black pepper, to taste

Red pepper flakes (optional)

Fresh basil or arugula for garnish

Instructions
 

Toast the Bread: Begin by toasting your slices of whole grain or sourdough bread until they are golden brown and crispy. Set aside.

    Prepare the Avocado Spread: In a small bowl, mash the ripe avocado with a fork. Add the lemon juice, a pinch of salt, and pepper. Mix until well combined and creamy.

      Slice the Tomato: Thinly slice the tomato and sprinkle with a little salt and fresh pepper to enhance its flavor.

        Poach the Eggs: Fill a saucepan with water and bring it to a gentle simmer. Add a splash of vinegar (optional) to help the eggs hold their shape. Crack each egg into a small bowl. Create a gentle whirlpool in the simmering water and slowly slide one egg into the center. Poach for 3-4 minutes or until the whites are set and the yolk remains runny. Remove with a slotted spoon and place on a paper towel to drain. Repeat with the second egg.

          Assemble the Toast: Spread a generous layer of the mashed avocado onto each slice of toasted bread. Layer the tomato slices on top of the avocado.

            Add the Poached Eggs: Carefully place a poached egg on top of each slice.
