Ingredients

2 cups tri-color rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup bell peppers (red, yellow, green), diced

1/2 cup black olives, sliced

1 cup cooked chicken breast, diced (optional for protein)

1/4 cup fresh parsley, chopped

1/2 cup feta cheese, crumbled

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon garlic powder

Salt and pepper to taste

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the tri-color rotini pasta and cook according to package directions until al dente. Drain and rinse the pasta under cold water to cool it down.

Prep the Veggies: While the pasta is cooling, chop the cherry tomatoes, cucumber, bell peppers, and black olives. If using chicken, chop it into bite-sized pieces.

Combine Ingredients: In a large mixing bowl, combine the cooled pasta, chopped vegetables, cooked chicken (if using), parsley, and feta cheese.

Make the Dressing: In a small bowl or jar, whisk together the olive oil, red wine vinegar, garlic powder, salt, and pepper. Taste and adjust seasoning as needed.

Dress the Salad: Pour the dressing over the pasta salad and gently toss everything together until well coated.

Chill: For the best flavor, cover the salad and refrigerate for at least 30 minutes before serving.

Serve: Give the salad a final toss before serving, and enjoy a vibrant, nutritious meal that’s perfect for school lunches or a quick weeknight dinner!
