3 medium-sized apples (Granny Smith or Honeycrisp), peeled and diced

2 tablespoons brown sugar

1 teaspoon ground cinnamon

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 cup rolled oats

1/2 cup all-purpose flour

1/3 cup brown sugar

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/3 cup cold unsalted butter, cut into small cubes

1/4 cup chopped nuts (walnuts or pecans, optional)

For Serving:

Vanilla ice cream or whipped cream (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Apple Filling:

      - In a large mixing bowl, combine the diced apples, brown sugar, ground cinnamon, lemon juice, vanilla extract, and a pinch of salt. Toss until the apples are well coated. Set aside to let the flavors meld.

        Make the Crumble Topping:

          - In a separate bowl, whisk together the rolled oats, flour, brown sugar, salt, and ground cinnamon.

            - Add the cubed cold butter to the dry ingredients. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs. If using, stir in the chopped nuts for added crunch.

              Assemble the Cups:

                - Take a muffin tin and grease it lightly with butter or cooking spray.

                  - Spoon the apple filling evenly into each cup, filling them about three-quarters full.

                    - Top each apple-filled cup generously with the crumble topping.

                          Cool & Serve:
