Baked Cabbage Nest Burgers

1 large head of green cabbage

1 pound ground beef (or your preferred protein: turkey, tofu, or lentils)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon Worcestershire sauce

1 tablespoon olive oil

½ cup breadcrumbs (or gluten-free alternative)

4 slices of cheese (optional, for topping)

Lettuce leaves, for serving

Tomato slices, for serving

Ketchup and mustard, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Cabbage: Carefully remove the outer leaves of the cabbage. Place the head of cabbage in a large pot of boiling water for about 5-7 minutes to soften the leaves. Remove and let cool. You will need about 12 large leaves for the nests.

      Make the Burger Mixture: In a pan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened (about 3-4 minutes). In a large mixing bowl, combine the sautéed mixture with the ground beef, smoked paprika, oregano, salt, black pepper, Worcestershire sauce, and breadcrumbs. Mix until well combined.

        Form the Nest: Take a cabbage leaf and place about a quarter cup of the burger mixture in the center. Fold the sides over to create a nest shape (like a taco). Repeat with the remaining cabbage leaves and mixture.

          Bake the Nests: Place the cabbage nests in a baking dish, seam side down. Cover the dish with foil and bake for 25 minutes. Remove the foil, add a slice of cheese on top of each, and return to the oven for an additional 10 minutes or until the cheese is melted and bubbly.

            Serve: Once baked, remove the cabbage nests from the oven. Serve warm with lettuce leaves, fresh tomato slices, and your favorite condiments!
