Baked Carrot Zucchini Fritters

1 cup grated zucchini (about 1 medium zucchini)

1 cup grated carrots (about 2 medium carrots)

1/2 cup all-purpose flour (or gluten-free flour)

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1 large egg (or flax egg for a vegan option)

2 green onions, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp paprika

Salt and pepper to taste

2 tbsp olive oil (plus more for greasing)

Fresh herbs (like parsley or cilantro) for garnish

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper. Lightly grease it with olive oil to prevent sticking.

    In a large mixing bowl, combine the grated zucchini and carrots. Sprinkle with a pinch of salt and let it rest for about 15 minutes. This will help draw out excess moisture.

      After 15 minutes, use a clean dish cloth or paper towels to squeeze out as much moisture as you can from the zucchini and carrots. This step is crucial for crispy fritters!

        In the same mixing bowl, add the flour, grated Parmesan, egg, green onions, garlic, cumin, paprika, salt, and pepper. Mix until well combined. If using a flax egg, combine 1 tablespoon of ground flaxseed with 2.5 tablespoons of water, let it sit for 5 minutes to thicken, and then stir it into the mixture.

          Once the mixture is combined, use a tablespoon to scoop out the batter and form small patties, placing them on the prepared baking tray. Press them gently to flatten.

            Brush the tops of the fritters lightly with olive oil to help them brown nicely while baking.

              Bake in the preheated oven for about 25-30 minutes, turning them halfway through, until they are golden brown and crispy on the outside.

                Remove from the oven and let cool slightly. Garnish with fresh herbs before serving.

                  Serve warm with a dollop of Greek yogurt, tzatziki, or your favorite dipping sauce. Enjoy!
