Baked Chicken Caesar Pasta Bowls

8 oz rotini or penne pasta

2 cups cooked chicken breast, shredded or cubed

1 cup Caesar salad dressing

1 cup grated Parmesan cheese, divided

1 cup cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

1 cup mozzarella cheese, shredded

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

½ cup croutons (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the rotini or penne pasta according to package instructions until al dente. Drain and set aside.

      Mix the Ingredients: In a large mixing bowl, combine the cooked pasta, shredded chicken, Caesar dressing, ½ cup of Parmesan cheese, cherry tomatoes, spinach, garlic powder, onion powder, salt, and pepper. Mix well until everything is evenly coated.

        Prepare the Baking Dish: Lightly grease a 9x13 inch baking dish with cooking spray or olive oil. Transfer the pasta mixture into the dish, spreading it out evenly.

          Add Cheese: Sprinkle the remaining ½ cup of Parmesan cheese and the mozzarella cheese over the top of the pasta mixture.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

              Add Croutons: Remove the dish from the oven and sprinkle croutons on top for an added crunch. If desired, place it back in the oven for an additional 5 minutes to toast the croutons slightly.

                Garnish and Serve: Once done, remove from the oven, and let it cool for a few minutes. Garnish with fresh parsley before serving.
