Baked Egg and Spinach Breakfast Pockets

1 large package of crescent roll dough (8 oz)

4 large eggs

2 cups fresh spinach, chopped

1 cup shredded cheese (cheddar, mozzarella, or feta)

1/2 cup diced red bell pepper

1/4 cup chopped onion

1 tablespoon olive oil

Salt and pepper to taste

Optional: 1/4 teaspoon garlic powder and/or 1/4 teaspoon paprika for added flavor

Sesame seeds for topping (optional)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Sauté the Vegetables: In a medium skillet, heat olive oil over medium heat. Add the chopped onion and red bell pepper, sautéing for about 3-4 minutes until softened. Add the chopped spinach and cook until wilted, about 2 minutes. Season with salt, pepper, and optional garlic powder and paprika. Remove from heat and let it cool.

      Prepare the Egg Mixture: In a bowl, whisk together the eggs. Stir in the sautéed vegetable mixture and half of the shredded cheese. Set aside.

        Roll Out Dough: Open the crescent roll dough and carefully separate it into individual triangles. Place them on a lined baking sheet.

          Fill the Pockets: Spoon a generous amount of the egg and spinach mixture onto the wider end of each triangle. Fold the edges over the filling to form a pocket shape, sealing the edges well. Press down the seams to prevent any filling from leaking out during baking.

            Add Cheese and Toppings: Sprinkle the remaining cheese on top of each pocket and, if desired, sprinkle sesame seeds for an added crunch.

              Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the dough is golden brown and cooked through.

                Cool and Serve: Once baked, remove from the oven and let them cool for a few minutes. Serve warm, and enjoy your delicious breakfast pockets!
