Baked Feta Pasta with Summer Cherry Tomatoes

8 oz (225g) pasta of choice (penne or fusilli works best)

1 block (8 oz) of feta cheese

2 cups cherry tomatoes, halved

1/2 cup extra-virgin olive oil

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust based on spice preference)

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish

Zest of 1 lemon (optional)

Grated Parmesan cheese, for serving (optional)

Preheat your oven: Preheat your oven to 400°F (200°C).

    Prepare the baking dish: In a large, oven-safe baking dish, add the cherry tomatoes and garlic. Drizzle with olive oil and season with red pepper flakes, dried oregano, salt, and pepper. Toss everything together until evenly coated.

      Add feta: In the center of the vegetable mixture, place the block of feta cheese, ensuring it’s surrounded by the tomatoes. Drizzle a bit more olive oil over the feta, and season it with a pinch of salt and pepper.

        Bake: Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the tomatoes have burst and the feta is golden and creamy.

          Cook the pasta: While the feta and tomatoes are baking, bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the remaining water.

            Combine everything: Once the feta and tomatoes are done, remove the baking dish from the oven. Use a fork to mash the feta and cherry tomatoes together until you get a creamy sauce. If it seems too thick, add a little bit of the reserved pasta water to loosen it up.

              Mix with pasta: Add the drained pasta directly into the baking dish, tossing everything together to ensure the noodles are well coated with the creamy sauce.
