12 wonton wrappers

8 oz feta cheese, crumbled

2 cups fresh spinach, chopped

1 cup ricotta cheese

1/4 cup grated Parmesan cheese

1 clove garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

2 tablespoons olive oil

1 tablespoon fresh lemon juice

Fresh parsley or dill, for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Wonton Cups: Lightly spray a muffin tin with cooking spray. Gently press each wonton wrapper into the muffin tin to form a cup shape.

      Make the Filling: In a large mixing bowl, combine the crumbled feta cheese, chopped spinach, ricotta cheese, grated Parmesan, minced garlic, red pepper flakes, salt, and pepper. Mix well until everything is evenly combined.

        Fill the Wonton Cups: Spoon the spinach and feta filling evenly into each of the wonton cups, pressing gently to pack the mixture.

          Drizzle with Olive Oil: Drizzle a little olive oil over each filled cup, and finish with a squeeze of fresh lemon juice to enhance the flavors.

            Bake: Place the muffin tin in the preheated oven and bake for about 15-20 minutes, or until the wonton wrappers are golden brown and crispy.
