Ingredients

1 loaf of brioche bread, cut into 1-inch cubes (about 10-12 cups)

6 large eggs

2 cups whole milk

1 cup half-and-half

1/2 cup granulated sugar

1 tsp vanilla extract

1 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 tsp salt

1/2 cup maple syrup (plus extra for serving)

1/4 cup unsalted butter, melted

Powdered sugar for dusting (optional)

Fresh berries for garnish (optional)

Instructions

Prep the Bread: Start by preheating your oven to 350°F (175°C). Grease a 9x13-inch baking dish with non-stick spray or butter. Place the cubed brioche bread evenly into the baking dish, ensuring an even distribution.

Create the Custard Mixture: In a large bowl, whisk together the eggs, whole milk, half-and-half, granulated sugar, vanilla extract, cinnamon, nutmeg, and salt until fully combined. Make sure the mixture is smooth with no lumps.

Combine: Pour the custard mixture evenly over the cubed bread, pressing down lightly to ensure all pieces are soaked. If you have time, cover the dish with plastic wrap and refrigerate for at least 30 minutes or overnight for the best results.

Bake: Once ready to bake, uncover the dish and drizzle the melted butter over the top. Bake in the preheated oven for 40-45 minutes, or until the sides are golden brown and the center is set. A knife inserted in the center should come out clean.

Prepare the Maple Drizzle: While the casserole is baking, heat the maple syrup in a small saucepan over low heat, allowing it to warm up but not boil. This will enhance the flavor.

Serve: Once the casserole is done, remove it from the oven and let it cool for about 10 minutes. Dust with powdered sugar, if desired, and serve warm with warm maple syrup drizzled on top. Add fresh berries for a touch of freshness.
