Ingredients

2 cups rolled oats

1/2 cup almond milk (or any milk of your choice)

1/4 cup pure maple syrup (or honey)

1/4 cup unsweetened applesauce

1/2 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 cup mixed berries (fresh or frozen; blueberries, strawberries, raspberries)

1/4 cup chopped nuts (optional; walnuts or almonds)

1/4 cup dark chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with silicone or paper liners for easy removal.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt.

Combine Wet Ingredients: In a separate bowl, whisk together the almond milk, maple syrup, applesauce, and vanilla extract until well blended.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the mixed berries and chopped nuts (if using).

Fill Muffin Tin: Spoon the oat mixture into the prepared muffin tin, filling each cup about three-quarters full. If desired, sprinkle dark chocolate chips on top of each cup.

Bake: Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.

Cool and Serve: Let the oatmeal cups cool in the muffin tin for 5 minutes before transferring to a wire rack. Serve warm or store in an airtight container.
