4 medium-sized zucchini

1 cup finely chopped cherry tomatoes (or any preferred tomato)

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 cup cooked quinoa or rice (optional for added texture)

2 cloves garlic, minced

1 teaspoon Italian seasoning (oregano, basil, thyme)

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons olive oil

    Prepare the zucchini: Slice the zucchini in half lengthwise. Using a spoon, carefully scoop out the center of each half, creating a boat while leaving about ¼ inch of flesh on the skin.

      Prepare the filling: In a mixing bowl, combine the scooped-out zucchini flesh, chopped cherry tomatoes, ¾ cup of the mozzarella cheese, ¼ cup of the Parmesan cheese, cooked quinoa/rice (if using), minced garlic, Italian seasoning, salt, pepper, and olive oil. Mix until well combined.

        Fill the zucchini boats: Place the zucchini halves on a baking sheet lined with parchment paper. Generously spoon the filling into each zucchini boat, packing it in slightly.
