Baked Spinach and Sausage Ziti

12 oz ziti pasta

1 lb Italian sausage (mild or spicy, casing removed)

2 tablespoons olive oil

3 cloves garlic, minced

8 cups fresh spinach (approximately 1 large bag)

1 can (28 oz) crushed tomatoes

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional for heat)

Salt and pepper to taste

2 cups ricotta cheese

1 cup grated Parmesan cheese, divided

3 cups shredded mozzarella cheese, divided

Fresh basil for garnish (optional)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Cook the pasta: In a large pot of salted boiling water, cook the ziti according to package instructions until al dente. Drain and set aside.

      Sauté the sausage: In a large skillet, heat olive oil over medium heat. Add the Italian sausage, breaking it apart with a spatula, and cook until browned, about 5-7 minutes. Drain excess fat if necessary.

        Add garlic and spinach: Add the minced garlic to the skillet and sauté for about 1 minute until fragrant. Gradually add the fresh spinach, stirring until wilted, about 3-4 minutes.

          Combine with tomatoes: Pour in the crushed tomatoes, then stir in the oregano, basil, red pepper flakes (if using), salt, and pepper. Let the mixture simmer for about 5 minutes to blend the flavors.

            Mix the cheeses: In a large bowl, combine ricotta cheese, 1/2 cup of Parmesan cheese, and 2 cups of mozzarella cheese. Mix until well combined.

              Assemble the dish: In a large mixing bowl, combine the cooked ziti with the sausage and spinach sauce. Stir until the pasta is well coated.

                Layer the bake: Spread half of the ziti mixture in a 9x13 inch (or similar size) baking dish. Dollop half of the ricotta mixture over the pasta, then sprinkle with 1 cup of mozzarella cheese. Layer the remaining ziti mixture on top, followed by the rest of the ricotta mixture and the remaining mozzarella cheese. Finish with the rest of the Parmesan cheese sprinkled on top.

                  Bake: Cover the dish with aluminum foil (to prevent excessive browning) and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, until the cheese is bubbly and golden brown.

                    Let it rest: Remove the dish from the oven and let it sit for about 10 minutes before serving. Garnish with fresh basil if desired.
