Baked Spinach Stuffed Shells

20 large pasta shells

2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)

1 cup ricotta cheese

1 ½ cups shredded mozzarella cheese, divided

½ cup grated Parmesan cheese

1 egg, beaten

2 cloves garlic, minced

1 teaspoon dried Italian herbs (basil, oregano, thyme)

1 jar (24 oz) marinara sauce

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Cook the shells: In a large pot of salted boiling water, cook the pasta shells according to package instructions until al dente (slightly undercooked). Drain and set aside to cool.

      Prepare the filling: In a large bowl, combine the chopped spinach, ricotta cheese, 1 cup of shredded mozzarella, Parmesan cheese, beaten egg, minced garlic, Italian herbs, salt, and pepper. Mix until well combined.

        Stuff the shells: Take each pasta shell and gently fill it with the spinach mixture, using a spoon or your fingers to ensure they are well packed. Place the stuffed shells seam side up in a greased 9x13 inch baking dish.

          Add the sauce: Pour the marinara sauce evenly over the stuffed shells, ensuring they are well-coated. Sprinkle the remaining ½ cup of mozzarella cheese on top.

            Bake: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.

              Serve: Allow the stuffed shells to cool for 5 minutes before serving. Garnish with fresh basil leaves if desired.
