Ingredients

For the Meatballs:

1 pound ground turkey

1 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

2 cloves garlic, minced

1 large egg

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried oregano

Zest of 1 lemon

For the Garlic Gravy:

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

3 cups chicken broth

4 cloves garlic, minced

1 teaspoon thyme

Salt and pepper, to taste

Fresh parsley, for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Mix the Meatball Ingredients: In a large mixing bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, parsley, minced garlic, egg, onion powder, salt, black pepper, oregano, and lemon zest. Mix until everything is well combined, but be careful not to over-mix.

Form the Meatballs: Use your hands to form the mixture into 1-inch meatballs and place them on the prepared baking sheet. You should end up with about 20 meatballs.

Bake the Meatballs: Place the baking sheet in the preheated oven and bake for about 20-25 minutes, or until the meatballs are cooked through and reach an internal temperature of 165°F (74°C).

Prepare the Garlic Gravy: While the meatballs are baking, make the garlic gravy. In a medium saucepan, melt the butter over medium heat. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.

Create the Roux: Sprinkle the flour over the garlic and whisk together. Cook for about 2 minutes, stirring constantly to prevent burning.

Add the Chicken Broth: Gradually add in the chicken broth, whisking continuously to avoid lumps. Bring the mixture to a simmer and cook until it thickens, about 5-7 minutes.

Season the Gravy: Stir in the thyme and season the gravy with salt and pepper to taste.

Serve: Once the meatballs are baked, remove them from the oven and pour the garlic gravy over them. Garnish with fresh parsley.

Enjoy: Serve your savory turkey meatballs with garlic gravy over mashed potatoes, rice, or alongside steamed vegetables.
