Baked Zucchini Parmesan Fries

2 medium zucchinis

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

1/2 cup all-purpose flour

2 large eggs

Cooking spray or olive oil spray

Preheat the Oven: Start by preheating your oven to 425°F (220°C), and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Zucchini: Wash the zucchinis and slice them into thin sticks, about 3-4 inches long and 1/4 inch wide. Pat them dry using paper towels to remove excess moisture; this helps them crisp up better.

      Set Up Breading Stations: In a shallow dish, place the flour and season it with a pinch of salt and pepper. In a second dish, whisk the eggs until well combined. In a third dish, mix the breadcrumbs, Parmesan, garlic powder, onion powder, Italian seasoning, and a bit more salt and pepper until thoroughly combined.
