Ingredients

1 lb Brussels sprouts, halved

1 cup seedless grapes (red or green)

1/4 cup balsamic vinegar

2 tablespoons honey or maple syrup

2 tablespoons olive oil

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon fresh thyme leaves (optional, for garnish)

Crumbled feta cheese (optional, for topping)

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C).

Prepare Brussels Sprouts: Rinse the Brussels sprouts, trim the ends, and cut them in half. Place them in a large mixing bowl.

Toss Ingredients: Add the grape to the bowl of Brussels sprouts. In a small bowl, whisk together the balsamic vinegar, honey (or maple syrup), olive oil, garlic powder, salt, and pepper. Pour this mixture over the Brussels sprouts and grapes, and toss well to coat everything evenly.

Roast: Spread the Brussels sprouts and grapes on a baking sheet in a single layer. Make sure they are not overcrowded for even roasting. Roast in the preheated oven for about 25-30 minutes, stirring halfway through, until the Brussels sprouts are golden brown and tender, and the grapes are softened and caramelized.

Garnish and Serve: Remove from the oven and let sit for a minute. If desired, sprinkle with fresh thyme leaves and crumbled feta cheese for added flavor. Serve warm as a delicious side dish or a unique appetizer.
