Balsamic–Glazed Pork Tenderloin

1.5 lbs pork tenderloin

1/2 cup balsamic vinegar

1/4 cup honey

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon Dijon mustard

1 teaspoon fresh rosemary, finely chopped (or 1/2 teaspoon dried)

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)

Salt and pepper to taste

1/2 teaspoon red pepper flakes (optional, for heat)

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Pork: In a bowl, whisk together the balsamic vinegar, honey, olive oil, minced garlic, Dijon mustard, rosemary, thyme, salt, pepper, and red pepper flakes. Place the pork tenderloin in a resealable plastic bag or shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

    Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with foil or parchment for easy cleanup.

      Sear the Pork: Remove the pork tenderloin from the marinade (reserve the marinade for later) and let it come to room temperature for about 15 minutes. In a large oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Once the oil is hot, add the pork and sear for about 3-4 minutes on each side until browned.

        Glaze and Roast: After searing, pour the reserved marinade over the pork. Transfer the skillet to the preheated oven and roast for about 20-25 minutes, or until the internal temperature reaches 145°F (63°C). Baste the pork with the glaze halfway through cooking.

          Rest the Pork: Remove the pork from the oven and transfer it to a cutting board. Let it rest for about 5-10 minutes to allow the juices to redistribute.
