Banana Bliss Oatmeal Muffins

1 cup rolled oats

1 cup mashed ripe bananas (about 2-3 bananas)

1/2 cup Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup

1/4 cup brown sugar (packed)

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup chocolate chips or chopped nuts (optional)

1/2 cup diced apples or berries (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with cooking spray.

    Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking soda, baking powder, ground cinnamon, and salt. Stir well to ensure everything is evenly distributed.

      Prepare the Wet Ingredients: In another bowl, whisk together the mashed bananas, Greek yogurt, honey (or maple syrup), brown sugar, eggs, and vanilla extract until smooth and creamy.

        Combine Mixtures: Pour the wet mixture into the dry ingredients and stir gently until just combined. Avoid overmixing, as this can lead to denser muffins.

          Add Extras: If desired, fold in chocolate chips, nuts, and/or diced apples or berries. This adds extra flavor and texture to your muffins!

            Fill Muffin Tin: Using a spoon or an ice cream scoop, divide the batter evenly among the prepared muffin cups, filling each cup about two-thirds full.

              Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

                Cool and Serve: Once baked, remove the muffins from the oven and let them cool in the tin for 5 minutes. Then, transfer them to a wire rack to cool completely. Enjoy your warm or store them in an airtight container for later!
