Ingredients

1 cup rolled oats

1 cup mashed ripe bananas (about 2 medium bananas)

1/2 cup fresh or frozen blueberries

1/2 cup almond flour (or all-purpose flour)

1/4 cup honey or maple syrup

1/4 cup coconut oil, melted (or unsalted butter)

1/2 teaspoon vanilla extract

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/4 cup chopped nuts (optional, such as walnuts or pecans)

2 tablespoons chia seeds (optional for added nutrition)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, honey (or maple syrup), melted coconut oil, and vanilla extract. Mix until well blended.

Combine Dry Ingredients: In another bowl, whisk together the rolled oats, almond flour, baking soda, cinnamon, and salt until evenly mixed.

Incorporate Ingredients: Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Be careful not to overmix.

Add Blueberries and Nuts: Fold in the blueberries and nuts (if using) along with the chia seeds until evenly distributed throughout the dough.

Shape Cookies: Using a tablespoon or cookie scoop, drop dough balls onto the prepared baking sheet, leaving some space between each cookie as they will spread a little while baking.

Bake: Bake the cookies in the preheated oven for 12-15 minutes or until the edges are lightly golden and the centers appear set.

Cool and Enjoy: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy your delicious Banana Blueberry Oatmeal Cookies!
