BBQ Brisket Melts

1 lb cooked brisket, shredded

1 cup BBQ sauce (homemade or your favorite brand)

4 slices of sourdough bread

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1 medium onion, thinly sliced

2 tablespoons butter

1 teaspoon garlic powder

1 teaspoon smoked paprika

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Brisket: In a medium bowl, combine the shredded brisket with BBQ sauce, garlic powder, and smoked paprika. Mix well until the brisket is fully coated. Set aside.

    Sauté the Onions: In a skillet over medium heat, melt 1 tablespoon of butter. Add the sliced onions and sauté for about 5-7 minutes until they become caramelized and golden brown. Remove from skillet and set aside.

      Assemble the Melts: On a clean surface, lay out the slices of sourdough bread. Spread a thin layer of BBQ sauce on each slice. On two of the slices, layer half of the brisket mixture, followed by half of the caramelized onions, and a generous amount of both cheeses. Top with another slice of bread to create a sandwich.

        Grill the Sandwiches: In the same skillet, melt the remaining butter over medium heat. Carefully place the sandwiches in the skillet and grill for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted. If needed, cover the skillet with a lid to help the cheese melt evenly.

          Serve and Garnish: Once the sandwiches are perfectly toasted, remove them from the skillet and let them rest for a minute. Slice them in half and sprinkle fresh parsley on top for a pop of color and flavor.
