Ingredients

2 lbs boneless, skinless chicken thighs

1 cup barbecue sauce (your choice)

1 medium onion, diced

4 cloves garlic, minced

1 tsp smoked paprika

1 tsp chili powder

1/2 tsp salt

1/2 tsp black pepper

1/4 cup apple cider vinegar

1/4 cup chicken broth

1 tsp Worcestershire sauce

12 slider buns

1 cup coleslaw (for topping)

Pickles (for garnish)

Fresh cilantro (optional, for garnish)

Instructions

Prepare the Chicken: Place the chicken thighs into a slow cooker. Add the diced onion and minced garlic, spreading them evenly over the chicken.

Mix the Sauce: In a separate bowl, mix the barbecue sauce, smoked paprika, chili powder, salt, black pepper, apple cider vinegar, chicken broth, and Worcestershire sauce until well combined.

Combine: Pour the sauce mixture over the chicken and onions in the slow cooker, ensuring the chicken is well coated.

Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and shreddable.

Shred the Chicken: Once cooked, remove the chicken from the slow cooker and place it on a cutting board. Use two forks to shred the chicken into bite-sized pieces. Return the shredded chicken to the slow cooker and stir to combine with the sauce.

Assemble the Sliders: Slice the slider buns in half. Place a generous amount of pulled chicken on each bottom half of the bun. Top with a spoonful of coleslaw and add pickles to taste.

Serve: Close the sliders with the top halves of the buns. Serve immediately with extra BBQ sauce on the side if desired. Garnish with fresh cilantro for a pop of color!
