Beef and Broccoli Ramen Stir Fry

8 oz fresh ramen noodles (or instant ramen, discard the seasoning packet)

1 lb flank steak, thinly sliced against the grain

2 cups broccoli florets (fresh or frozen)

2 tablespoons vegetable oil (divided)

3 cloves garlic, minced

1 inch piece of ginger, grated

1/4 cup soy sauce (low sodium preferred)

2 tablespoons oyster sauce

1 tablespoon sesame oil

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

1/2 teaspoon black pepper

1 teaspoon sugar (optional, to balance flavors)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Ramen:

    - If using fresh ramen, cook according to package instructions until just tender, then drain and set aside. If using instant ramen, cook in boiling water for about 3-4 minutes, drain, and set aside.

      Marinate the Beef:

        - In a bowl, combine the sliced flank steak with 2 tablespoons of soy sauce, black pepper, and sugar (if using). Let it marinate for 15-20 minutes for enhanced flavor and tenderness.

          Blanch the Broccoli:

            - In a pot of boiling water, blanch the broccoli florets for about 2 minutes until bright green and crisp-tender. Drain and set aside.

              Heat the Pan:

                - In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once hot, add the marinated beef in a single layer. Allow it to sear without stirring for about 1-2 minutes, then stir-fry until browned and cooked through. Remove the beef from the pan and set aside.

                  Sauté the Aromatics:

                    - In the same skillet, add the remaining 1 tablespoon of oil. Add minced garlic and grated ginger, and sauté for about 30 seconds until fragrant, being careful not to burn them.

                      Combine Ingredients:

                        - Return the beef to the skillet along with the blanched broccoli. Add the cooked ramen noodles, oyster sauce, sesame oil, and the remaining soy sauce. Toss everything together, ensuring the noodles are well-coated and heated through.

                          Thicken the Sauce:

                            - Mix the cornstarch slurry and add it to the stir-fry. Cook for another minute or two, allowing the sauce to thicken and cling to the noodles and vegetables.

                              Serve:
