Beef & Mushroom Country Casserole

1 pound ground beef

8 ounces mushrooms, sliced (button or cremini)

1 medium onion, diced

3 cloves garlic, minced

2 cups beef broth

1 cup heavy cream

1 tablespoon soy sauce

2 teaspoons Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 tablespoon olive oil

Salt and pepper to taste

4 medium potatoes, peeled and sliced thinly

1 cup shredded cheddar cheese (optional)

Fresh parsley for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

    Cook the Beef: In a large skillet over medium heat, add the olive oil. Once hot, add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if needed.

      Add Vegetables: To the skillet with beef, add the diced onion, sliced mushrooms, and minced garlic. Sauté for about 5 minutes until the onion is translucent and the mushrooms have released some moisture.

        Prepare the Sauce: Pour in the beef broth, heavy cream, soy sauce, and Worcestershire sauce. Stir in the dried thyme, dried rosemary, salt, and pepper. Bring the mixture to a gentle simmer, allowing it to thicken slightly, about 3-5 minutes.

          Assemble the Casserole: In a greased 9x13-inch baking dish, layer half of the sliced potatoes on the bottom. Pour half of the beef and mushroom mixture over the potatoes. Repeat the layers with the remaining potatoes and the beef mixture.

            Add Cheese (Optional): If using, sprinkle the shredded cheddar cheese evenly over the top layer of the casserole.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes. After 45 minutes, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden.
