1 medium head of cauliflower, chopped into florets

4 cloves of garlic, minced

1 medium onion, diced

4 cups vegetable broth (or chicken broth)

1 cup heavy cream

1 ½ cups sharp cheddar cheese, grated

2 tablespoons olive oil

1 teaspoon thyme (dried or fresh)

Salt and pepper, to taste

Fresh chives, for garnish

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until softened, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant, being careful not to burn the garlic.

    Cook the Cauliflower: Add the cauliflower florets to the pot and pour in the vegetable broth. Bring to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the cauliflower is tender.

      Blend the Soup: Using an immersion blender (or transferring the mixture to a stand blender in batches), blend the soup until smooth and creamy. If using a stand blender, return the soup to the pot once blended.

        Add Cream and Cheese: Stir in the heavy cream and grated cheddar cheese until melted and combined. If the soup is too thick for your liking, add a little more broth until you achieve the desired consistency.

          Season: Add thyme, and season with salt and pepper to taste. Simmer for another 5 minutes to allow the flavors to meld.
