Ingredients

For the Savory Bites:

1 cup cooked quinoa

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1/2 cup diced bell peppers (any color)

1/4 cup chopped fresh basil

1 large egg, beaten

1/2 teaspoon garlic powder

Salt and pepper to taste

1 cup whole wheat breadcrumbs

Olive oil spray (for cooking)

For the Sweet Treats:

1 ripe banana, mashed

1/2 cup rolled oats

1/4 cup almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

1/2 teaspoon cinnamon

1/4 cup dark chocolate chips

Pinch of salt

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Make the Savory Bites:

      - In a large mixing bowl, combine cooked quinoa, mozzarella cheese, Parmesan cheese, diced bell peppers, chopped basil, beaten egg, garlic powder, salt, and pepper. Mix until well combined.

        - Form the mixture into small bite-sized balls (about the size of a tablespoon) and roll each ball in the whole wheat breadcrumbs to coat.

          - Place the quinoa bites on the prepared baking sheet and lightly spray them with olive oil.

            - Bake for 15-20 minutes or until they are golden brown and crispy, flipping them halfway through.

              Prepare the Sweet Treats:

                - In another bowl, combine the mashed banana, rolled oats, almond butter, honey (or maple syrup), cinnamon, and salt. Mix well until all ingredients are incorporated. Gently fold in the dark chocolate chips.

                  - Using spoonfuls of the mixture, form small cookies and place them on a separate lined baking sheet.

                    - Bake in the oven for about 10-12 minutes until the edges are golden. Let cool for a few minutes; they’ll firm up as they cool.

Pack Your Bento: Once both the savory bites and sweet treats have cooled, pack them into a bento box. Feel free to add fresh fruit or veggies as sides.

Enjoy! These treats are perfect for after school snacks or a delicious, healthy pick-me-up anytime!
